Seared Roasted Whole Chicken

Equipment

  • Large nonstick skillet (oven safe)
  • Oven
  • Slow Cooker

Ingredients
  

  • 1 Whole Chicken
  • 2 tbsp Organic Coconut Oil (Extra Virgin)
  • Herbs of Eden Organics Spice Blend (Your choice)
  • Sea Salt or Kosher Salt (Season to taste)

Instructions
 

  • Preheat oven to 400 degrees or crockpot to high.
  • Wash chicken thoroughly, inside and out and pat dry.
  • Season chicken inside and out according to your desire. I like mine well seasoned. Remember our spice blend are salt free so you have to add salt. Salt to your desire!
  • Heat skillet on medium heat and add 2 tablespoons coconut oil for cooking.
  • Carefully place chicken in skillet backside down and cook for 10 to 12 minutes. Use tongs to carefully turn chicken breast-side down and cook for 10 to 12 minutes. Transfer to oven or crockpot.
  • If transferring to oven add 1/2 cup water in skillet before tranferring to oven, if using crockpot use 1 1/2 cup of water to deglaze skilllet and cook for 5 minutes on medium temp, pour over chicken. Cover the crockpot and cook for 1 1/2 to 2 hours. The crockpot version is the best for pull chicken.

Notes

In our home this chicken serves 3 meals, especially if you do the pull chicken. You can make barbeque sandwiches with cole slaw, burritos, chicken tacos, chicken salad, etc. Remove all chicken from bones and wrap the bones to freeze. I use the bones to make chicken broth.
