Chicken Tortilla Soup

Chicken tortilla soup is one of my favorite soups. It is definitely a comfort food that can be served on any given day. I've created a spice blend to make this delicious meal a little easier.

Ingredients
  

  • 1/2 orange, red and green bell diced
  • 2 garlic cloves minced
  • 1 medium onion diced
  • 1 -15 oz can crushed tomatoes unsalted
  • 1 -15 oz can organic diced tomatoes unsalted
  • 4 cups chicken broth
  • 4 organic corn tortillas cut in strips
  • 2 tbsp Herbs of Eden Organics Tortilla Soup Blend
  • 1 -12 oz bag of organic frozen sweet whole kernel corn
  • 1 -15 oz can organic black beans rinsed and drained
  • 1 -4 oz can sliced or chopped green chiles

Toppings

  • green onion, cilantro, avocado, Shredded Monterey Jack cheese or your choice, tortilla chips, Greek Yogurt

Instructions
 

  • Heat oil in a medium size pot and add all chopped vegetables except garlic. Cook until tender, add garlic and then cook for few minutes.
  • Add broth, crushed tomatoes and diced tomatoes, tortilla soup base and bring to a boil.
  • Add beans, corn, green chiles pepper and shredded chicken, reduced heat, cover and cook for 20 minutes and then add tortilla strips and cook for an additional 10 minutes, stirring occasionally. Serve with tortilla chips and toppings. Enjoy
