Baked Lemon & Garlic Chicken with Pepper Rings

I wanted to do something difference with chicken legs and fancy them up a bit. These colorful bell peppers served both purposes. I decided to take it a step further and add onion rings which take the taste up a notch. I prefer sweet yellow onion, but your choice.

Ingredients
  

  • 8 chicken legs
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 large yellow onion
  • 1 to 2 tbsps Lemon & Garlic Pepper Spice Blend
  • 1 to 1 1/2 tsp sea salt
  • 1 egg (For egg wash)

Instructions
 

  • Preheat oven to 400 degrees. Wash, remove core and slice each pepper in 8 rings and put aside. Slice onion in rings and set aside. In a small bowl add the egg and 1 tablespoon of water, mix and set aside.
    Wash chicken and pat dry with a paper towel.
    Brush each leg with egg wash, season generously with lemon pepper chicken blend (reserve 2 teaspoons of spice blend for after the pepper and onions rings are on), and sprinkle with salt.
    Place chicken on baking dish; Alternate pepper ring, onion ring, pepper, onion, and ending with a pepper ring. Sprinkle with remaining spice blend. Drizzle with oil. Lay a piece of foil on top of chicken but don’t seal. Place in preheated oven and baked for 40 minutes, remove foil and bake for an additional 10 minutes, or until done.
     Remove and let rest for 5 minutes before serving.
